SUGAR BUNS

This will take you back some years. My mum was making these the other day and reminded me how delicious they are. They also go under the title of drop scones or rock cakes.

preparation time - 10 minutes

cooking time - 20 minutes

makes 12

ingredients

2 cups standard flour

2 1/2 tsp baking powder

100g butter, cold and diced

1/2 cup sugar

2 Tbsp custard powder

2 eggs, lightly whisked

1/2 cup milk

1 cup raisins, currants or sultanas

Method

Preheat the oven 200C (fan-forced 180C)

Sift the flour and baking powder together in a large bowl.

Add the butter and rub through with your finger tips until coarse breadcrumb texture.

Add the sugar and custard powder. Mix to combine.

Whisk the egg with the milk and add to dry ingredients. Mix to combine.

Add the dried fruit and mix through. The mixture will be a little more sticky than for regular scones.

Line 2 baking trays with baking paper.

Using a large dessert spoon, drops mounds of dough onto the paper, allowing space between.

sprinkle. with sugar on top and bake for 20 minutes or until risen and lightly golden and firm to the touch.

Cool and enjoy with butter.
