COURGETTE PANCAKES
I am always looking for recipes to use up my glut of courgettes (zucchinis). This recipe works well at anytime of the day or nights.
Makes 8
Ingredients
600-700g courgettes
1 onion, grated
3 Tbsp flour
4 egg whites
½ tsp thyme leaves
¼ tsp salt
Freshly ground black pepper
Oil for frying
Fresh lemon and unsweetened yoghurt to serve
Method
Grate the courgette and onion and place in a colander to drain (10-20 minutes).
Squeeze the courgette mixture in your hands to remove excess moisture. Place into a medium sized bowl.
Add the flour, salt, thyme and pepper, stir to combine.
Add the egg whites and combine.
Spoon mixture into hot oil and fry until golden on both sides (5 minutes)
Serve with a squeeze of lemon and spoonful of yoghurt.
