BRUSSEL SPROUT AND APPLE SALAD
We always need more tempting ways to use these delicious little vegetables up and this simple recipe does just that.
Serves 4
Ingredients
500g brussel sprouts, leaves separated
2 apples, 1 green 1 red, cut into thin rounds and matchsticks
1 Tbsp lemon juice
1 Tbsp cider vinegar
1 tsp fresh ginger, finely grated
1 tsp honey
2 Tbsp olive oil
Salt and cracked pepper
1 tsp poppy seeds
Method
Separate the leaves of the brussel sprouts and put into a large bowl.
Make the dressing by mixing the lemon juice, vinegar, ginger, honey and oil together, season with salt and pepper. Stir to combine.
Add the sliced apple to the dressing to coat and to prevent discolouring.
Pour over the brussel sprouts when ready to serve, sprinkle with poppy seeds and toss lightly to combine.
Serve.
