QUICK APRICOT TART
It is always good to have a dessert that you know you can do within minutes anytime of the year. I am using apricots today but of course almost any fruit will work on this.
Serves 4 individual tarts or 1 large
Ingredients
750g puff pastry
8 ripe apricots, halved and stones removed
4 Tbsp cream cheese
2 Tbsp apricot jam
2 Tbsp sugar
Method
Preheat oven 190C
Roll the pastry out so you can cut for 10-12 cm rounds (i used a side plate).
Place the pastry rounds on baking paper and return back to the fridge to rest for 30 minutes.
Mix the cream cheese with the jam.
Place the rounds on a baking tray, prick the centre of the pastry leaving a 2 cm rim around the pastry.
Spread over the jam and cream cheese mixture leaving the 2 cm rim.
Place 3-4 apricot halves cut side down. Sprinkle over the sugar and bake the tarts for 20 minutes or until well risen and golden.
Serve warm with vanilla ice cream or cream.
