REFRESHING ORANGE AND FENNEL SALAD

 

 

This salad just makes you feel great, it is packed with flavour, crunch and looks gorgeous. It will go beautifully with fish and pork.

 

Serves 4

Ingredients

2 heads of fresh fennel, sliced thinly

2 Tbsp fennel fronds (leaves) roughly chopped

2- 3 oranges, peeled and segmented and juice reserved

Juice of ½ lemon

Pinch sea salt flakes and freshly cracked black pepper

 

Method

Slice the fennel and put into a large bowl, add the orange segments and squeeze over any juice from the oranges,  add the lemon juice.

Season with cracked pepper and salt and finish with the fennel fronds.  Toss to combine and serve.
