FESTIVE SEASONAL SIDES

ROAST JERSEY BENNES

New season potatoes are a must at this time of the year and I like this way of cooking them as they can be popped into the oven, given a shake every now and then and ready to eat without the worry of over cooking them!

Serves 4-8

1 kg jersey benne potatoes, scrubbed, cut in half if large otherwise keep whole

4 Tbsp ghee, oil or dripping

1 bulb garlic, cloves separated but not peeled

10 sprigs summer savoury, thyme or rosemary

Sea salt flakes and freshly cracked pepper

Method

Preheat the oven 190C

Place the roasting pan with the ghee or oil in the oven and when the hot carefully add the potatoes, garlic and herbs. Season well and toss gently to coat the potatoes.

Bake for 30-45 minutes or until the potatoes are golden and crisp on the outside and creamy on the inside.

Remove from the oven and serve straight alongside the ham. Any left-overs make a wonderful salad.
